Yum- yum: Cheesy Cauliflower Patties!

Cheesy Cauliflower Patties

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c panko
1/2 t cayenne pepper (more of less to taste)
salt
olive oil

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.

Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

Yum Yum! Lemon Bars!

Two Ingredient Lemon Bars......
2 Ingredient Lemon Bars
Oh yeah you read that right only Two simple ingredients to make these melt in your mouth ( middle of the pie) lemon squares!
Yep this is like you cut your self a slice right out of the middle of the pie!
This is all you need:
1 box angel food cake mix( I use Betty Crocker)
2 cans lemon pie filling
I used two 21 oz cans of Comstock pie filling ( total of 42 oz)
Mix dry cake mix and cans of pie filling together in large bowl.
I just mixed it by hand...
Pour into greased 9 x 13″ baking pan.
Bake at 350 degrees for 25 minutes or until top is starting to brown.
NOTE...Mine took the full 25 minutes to get done and did not brown on top at all :))
Cool on wire rack and sprinkle with powered sugar. It has a melt in your mouth spongy texture.
I have come across this recipe in a few different places so thanks to those who shared this yummy recipe!

Just Arrived: Enchanted Pond Batiks

Enchanted Pond by Holly Taylor from Moda!

Holly loves the sounds around the pond, as they change almost by the hour. The morning is her favorite with the beautiful sounds from all the different species of birds coming to feed. Midday there is a peaceful quiet with the occasional chirp of the cricket. When nightfall arrives, it is as if the pond comes alive with the croaking of the frogs. It is truly enchanting for her to live on the pond.

Fat Quarter Bundles, Jelly Rolls and Charm Packs are available.

Yum Yum: Fruity Popcycles!

Ingredients:
3 cups watermelon puree (seedless if possible)
1/2 cup fresh blueberries
1/2 cup chopped fresh strawberries
1 kiwi, peeled and sliced
1 peach or nectarine, diced small
handful fresh cherries, pitted and chopped

Cut the watermelon into chunks and then puree it in a blender until smooth. Set aside.

Set out about 1 dozen popsicle molds (amount needed will vary depending on size of molds). Fill each one with the chopped fresh fruit. Then pour in the watermelon puree until each mold is full to the top. Place a popsicle stick into each one. Place into your freezer and freeze for about 6 to 8 hours.

When ready to serve, run the popsicle molds under warm water for a few seconds and then pull each one out.

March in like a bunny!

Yum Yum! Classic Sour Banana Nut Bread

What You Need

1/4 cup  butter, softened

1 cup  sugar

2 eggs

1 cup  BREAKSTONE'S or KNUDSEN Sour Cream

1 cup  mashed fully ripe bananas (about 3)

2-1/4cups  flour

1-1/2tsp.  CALUMET Baking Powder

1/2 tsp.  baking soda

1/2tsp.  salt

1 cup  chopped PLANTERS Walnuts

Make It

HEAT oven to 350ºF.
BEAT butter and sugar in large bowl with mixer until blended. Add eggs and sour cream; mix well. Add bananas and combined dry ingredients; mix just until moistened. Stir in nuts.
POUR into greased and floured 9x5-inch loaf pan.
BAKE 1 hour or until toothpick inserted in center comes out clean. Cool 5 min.; remove from pan to wire rack. Cool completely before slicing. Refrigerate leftovers.

I did it - I made three quilts!

I went to a quilt retreat last weekend and actually finished three quilts - YAY for me!!
Here is one I finished:

Its a "1600 Jelly Roll Quilt".  I used a jelly roll from Marcus Brothers call Ombre Hand Dyes.
You sew the strips end to end til you get 1600" and fold them in half and sew together. Do this until its about the right size!

These Ombre Hand Dyes are from Marcus Brothers.  Our gorgeous new OMBRE HAND DYES are mirror-imaged across the width, with deeper shades at both selvages, gradually tapering toward the lightest tint at the center.

The rolls are 2 1/2" x 42" and there are 40 strips in each roll.
